Was hoping for better I was excited to see what would be included in this new Gundry cookbook, as I love the program, but I was disappointed by how many recipes include nightshades, especially tomatoes and peppers. Alkaloid sensitivity isn't helped by pressure cooking, and one of the reasons I was drawn to the program originally was that these ingredients were de-emphasized in previous recipes. Parmigiano-Reggiano cheese is also an important part of several recipes, but the real thing isn't available to me locally and is expensive to order in, so I don't use it. This leaves me needing to work around these ingredients in too many recipes, in the same way that non-Gundry-approved recipes do. I'm comfortable with pressure cooking already (love my Instant Pot), so what I want is a set of curated recipes that creatively avoids my most problematic ingredients; I don't feel this collection does that to the extent that earlier Gundry recipes did. All of the dishes look delicious and would probably work well for lectin-free cooks who don't have these specific issues, but not for me.Recipes for the Instant pot or crock AND....why and why not some foods This book starts out (for me) with a bang. The author dives right into the subject of lectins. These are proteins in plants that are like natural pesticides and they aren't all that good for you. Cooking and soaking does get rid of some of it but if you want to know why non-grain dog foods may be toxic to some dogs (recent findings) then you can probably blame the lectins. They are found in nightshade foods (eggplant, tomatoes) and also beans and legumes. Lectins upset your gut so they may be something to avoid. The one he focuses on is Wheat Germ Agglutinin that may minic insulin in your body and help to make you fat (why bread adds to your weight so insidiously as many of you observe.)So his point is that you need to watch out for some of the plant foods as they may not be good for your particular situation.The book has a lot of good recipes including a very nice lamb dish and all of them use the single pot, instant or crock and that makes cooking easier for the family. Also has those single sheet-pan baked dinners that are so easy to clean up.Some recipes are different "hearts of palm" "fish" sticks (I love hearts of palm) and salmon-asparagus fajitas, but also beef and broccoli and broccoli cheddar soup, minestrone and lettuce wraps. Lots of very good vegetable recipe that will help the family eat more veg and enjoy it. A section has basics for the instant pot such as rice, hardboiled eggs and potatoes.Not all lectin containing foods are bad, but this book gives you good recipes, a lot of "keto" things and some ideas to consider.Many wonderful lectin-free recipies I am so glad that I pre-ordered this new book. I have been eating lectin free for over 1 year and am feeling better. This new book has many wonderful recipes that I have already tried and more that are next in line. My electric pressure cooker/slow cooker has been used a lot and the new cookbook has many more. I like the cranberry orange bread and cranberry sauce and feel like I can now have some "old" favorites. The recipes are easy to follow and use ingredients from my lectin free pantry items. I just had to add organic oranges for the zest. I also own the first cookbook and found more I want to make in this new book.
